Now you’ve got the basics, it’s time to impress with Chef Wilhelm’s sushi recipe - Spicy Ahi-Tuna Roll.
Spicy Ahi-Tuna Roll

- 6" long thin stick of Japanese Cucumber
- 2 oz Fresh Ahi Tuna cut into small cubes
- 1 teaspoon Toasted Sesame Seeds
- 1/4 teaspoon Chilli Paste
- 2 tbsp Mayonnaise
- 4 oz Sushi Rice
- 1/2 sheet of Nori Seaweed
- 1/2 oz Shoyu (variety of soy sauce)
- 1 teaspoon mixed Wasabi (dry Wasabi mixed with water to make a thick paste)
- 1 tbsp Pickled Ginger
- Mix tuna with mayonnaise and chilli paste (adjust amount of chilli paste to your taste)
- Place nori on dry cutting board.
- Place rice evenly on nori sheet, sprinkle with sesame seeds and turn upside down.
- Along the centre (lengthwise) of the nori sheet, place the cucumber stick and the spicy tuna, and roll like a cigar.
- With a sushi mat, press the roll into shape.
- Cut into six pieces, and serve with shoyu, pickled ginger and wasabi on the side.
