Shrimp Fritters

Ingredients
  • 2 cups flour
  • 1.5 cups chopped onion
  • 3 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh chives
  • 1/2 tsp minced habanero chilli
  • 3 cloves chopped garlic
  • 2 tsp chopped fresh thyme
  • 1 tsp distilled white vinegar
  • 1/2 tsp baking soda
  • 1 cup milk
  • 5 ounces medium uncooked shrimp
  • Vegetable oil
  • Lime wedges
Method
  1. Peel, de-vein and chop the shrimp.
  2. Combine the flour, onion, parsley, chives, chilli, garlic, thyme, vinegar, and baking soda in a medium bowl. Add the milk and stir until the mixture is smooth and sticky. Stir in the shrimp and season generously with salt and pepper.
  3. Heat the vegetable oil in a heavy deep saucepan to 375 degrees F.
  4. Working in batches, push a heaped teaspoonful of batter off of the spoon into the oil. Fry the fritters until they are golden brown, which should take approximately 3 minutes.
  5. Using a slotted spoon, transfer the fritters to paper towels to drain. Sprinkle with fresh lime juice. The fritters are best when made just before you're ready to serve them.

Lime Rum Punch

Ingredients
  • 2 cups sugar
  • 2 cups cold water
  • 1 cup fresh key lime juice
  • 3 cups white rum
  • 2 cups crushed ice
  • Angostura bitters
  • Grated nutmeg or allspice for garnish
  • Lime slices for garnish
Method
  1. In a small saucepan, combine the sugar and water. Stir well and bring to a boil.
  2. Reduce the heat to low and continue to cook for about five minutes stirring continuously until all the sugar has dissolved.
  3. Remove the pan from the heat and set aside until the sugar syrup is cooled.
  4. After the syrup is cold, combine it with the lime juice, rum, and ice in a pitcher. Stir well and pour into 4 tumblers, add a dash of bitters to each one and sprinkle the nutmeg or allspice over them. Add lime slices to garnish.
