Tom Yam Goong - Spicy and Sour Prawns

- 120g. Two large Tiger Prawns
- 20g. Sliced Straw Mushroom
- 5 pieces Sliced Chillies
- 10g. Sliced Galangal
- 2g. Sliced Lemon Grass
- 5g. Whole Shallot
- 2tsp. Lemon Juice
- 2tsp. Fish Sauce
- 400g. Chicken or Prawn Stock
- 5g. Kaffir Lime Leafs
- 5g. Coriander Leafs
- Heat the stock.
- Add the lemon grass, shallot and galangal.
- When stock boils, add the prawns.
- When stock comes to a boil again, remove pot from heat and then stir in the lime juice, fish sauce, chillies, kaffir lime leafs and top with coriander leafs.
- Enjoy!
